4 Tips to Get Weeknight Dinners on the Table Fast

We can all use a little help getting dinner on the table in a hurry, especially after a full day! Here are some great tips to help you make a balanced meal quickly.

  • When making rice, make a double batch. Store in the freezer and when ready to use, sprinkle with a little water and warm thoroughly in the microwave. Use as a side dish or stir fry with veggies, scrambled eggs, and a little chicken and you’ve got Chicken Fried Rice.
  • Deli Rotisserie Chickens, not only are they great by themselves, but adding them to soups, salads, and casseroles make for quick work. In my family we love enchiladas, so I just shred the chicken, mix with Spanish rice and cheese, roll them up and top with my favorite enchilada sauce and heat through. Dinner can be ready in less than 30 minutes.
  • Take the extra few minutes to make a double recipe of enchiladas, lasagna, or stuffed shells. Make one for that night and put the other in your freezer. When you want the second one, thaw in the fridge and heat through. Serve with a nice green salad.
  • USE YOUR FREEZER!!!!! Using your freezer can really give you a leg up on meals when you use it to your advantage. Make homemade chicken stock and store in quart containers and use when making homemade soups and dice up the chicken and use in your favorite casseroles or in pulled chicken sandwiches.
