For the last year I have been on a quest to find good white queso when dining at Mexican restaurants. I have encountered nothing but epic fails. This little bowl of awesomeness always makes me happy before grubbing down on some tacos or a burrito. That said I decided to take matters into my own hands and began searching for the perfect white queso recipe and I found it!
White Queso Recipe
1 lb Block of White American Cheese (cubed)
2/3 Cup Milk
1/2 Cup Cold Water
1/4 Cup Diced Green Chilies (from a can)
For more heat:
Add Chopped Pickled Jalapenos and 1 Ounce of the Juice
I put all the ingredients in my double boiler and stirred frequently until the cheese was melted and smooth. It can be melted in a pot on the stove on medium heat stirring constantly so it does not burn. Or you can put all the ingredients in a microwave safe bowl. Microwave on high for 5 minutes, stopping to stir after every minute. Remove from microwave once cheese is melted and smooth.
Serve immediately with chips or as a sauce for your favorite Mexican dishes.
~White American cheese can be found at the deli counter of most grocery stores. I used Boars Head brand, Land o’ Lakes is another good option.
