A perfect recipe for a very “Chili” day outside. Stay warm!

Ingredients

  • 3/4 lb extra lean ground beef
  • 2 cloves garlic, minced
  • 1 medium yellow onion, chopped
  • 1 (15 ounce) can chopped stewed tomatoes
  • 1 cup beef broth
  • 2 tablespoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 1/8 teaspoon cayenne pepper
  • 1 (15 ounce) can pinto beans, drained
  • 1/2 teaspoon salt

Directions

  1. In a large saucepan, cook ground beef, garlic and onion over medium heat, about 10 minutes.
  2. Drain well.
  3. Stir tomatoes with liquid, broth, chili powder, cumin, oregano and cayenne pepper into beef mixture.
  4. Reduce heat to low.
  5. Cover and simmer, stirring occasionally, for 1 hour
  6. Add pinto beans and salt.
  7. Cook stirring, for 15 minutes longer
  8. Optional: Use shredded cheese, sour cream, onions, crackers or cream cheese to add your own personal flavor to your bowl.

The longer this chili sits the ingredients mix and the flavor gets better and better. This is a perfect recipe to make ahead of time, place in the refrigerator, and then heat up when it’s almost time to serve.
