Baked Chicken Fajitas

Happy Tasty Tuesday!

This recipe comes from an amazing blog Chef-In-Training hosted by a stay-at-home mom named Nikki. I follow this site religiously, and have not made a recipe off of it my husband or I didn’t like. I made these Bake Chicken Fajitas last week, the recipe was so easy and they tasted delicious. This recipe is a great alternative to an age old classic.

INGREDIENTS

  • 1 lb. boneless, skinless chicken breasts cut into strips
  • 1 (15 oz.) can diced tomatoes
  • 1 (4 oz.) can diced green chilies
  • 1 medium onion sliced
  • 1 large green bell pepper seeded and sliced
  • 2 Tbsp. vegetable oil
  • 2 tsp. chili powder
  • 2 tsp. cumin
  • 1/2 tsp. garlic powder
  • 1/2 tsp. dried oregano
  • 1/4 tsp. salt
  • flour tortillas

INSTRUCTIONS

  1. Preheat the oven to 400 degrees. Grease a 9×13 baking dish.
  2. In a large bowl, mix together chicken, tomatoes, chilies, peppers, and onions in the dish.
  3. In a small bowl combine the oil and spices.
  4. Drizzle the spice mixture over the chicken and toss to coat. Dump into greased 9×13 pan and spread evenly across pan.
  5. Bake uncovered for 20-25 minutes or until chicken is cooked through and the vegetables are tender.
  6. Serve with warmed tortillas and any other desired toppings.
