Black Eyed Pea Caviar

This is a delicious way to get your black eyed peas in for New Year’s Day celebrations.

Ingredients:
3 cans drained black-eye peas with chopped jalapeño peppers (You can also do it without)
1 purple onion, chopped
3 tomatoes, chopped
3 cloves garlic, finely chopped
2 avocados, chopped
2 jalapeño peppers, chopped
1 green bell pepper, chopped
1/2 bunch of cilantro, chopped
Zesty Italian Salad Dressing

Directions:
Drain and rinse black-eyed peas.
Chop in a medium size bowl, onions, tomatoes, garlic, avocados, jalapeño peppers, bell pepper, cilantro.
Mix together black eyed peas and chopped items.
Add the Italian dressing to make the dip as thick or thin as you like.
Add salt and pepper.
Refrigerate overnight.
Serve with tortilla chips, corn chips, crackers.
