This is such a quick meal or after school snack and a great way to sneak in some extra vegetables without anyone ever knowing! I always keep tortillas in the freezer. It’s my go-to item for a quick meal. I like the Ezekiel brand but whatever works best for you is great. Here I used cookie cutters to make shapes. I preheat the oven to 350 while I prepared all the toppings.

Green – a small container of store bought pesto blended with a handful of spinach
Red – 1/2 cup of organic tomato pasta sauce blended with half of a small red bell pepper and 2 baby carrots
White – shredded mozzarella
Before decorating line a cookie sheet with foil and non-stick spray. Place the tortillas on the cookie sheet. Adding the toppings is the best job for those little hands to do, so I let my girls take over here. I usually see several handfuls of cheese going to the mouth before any gets on the pizzas. 🙂

Then in the oven they go for just a few minutes until the cheese melts and you have mini pizzas!
