Despite us encouraging our kids to eat a variety of foods, my youngest is quite picky when it comes to vegetables. I think we have mastered carrots… and that’s about it. I’ve had to come up with some creative ways to get veggies in to his diet until his palette becomes a little more adventurous! If you’re in a similar situation, these recipes can help! Use blended orange and white veggies with cheddar cheese and they’ll never know they’re in there!
What child can resist brownies? These ones are still rich and chocolate-y but they pack a protein punch because of the beans!
Hamburger Patties Made With Veggies
Now don’t confuse these with veggie burgers! Make your favorite hamburger patties with ground beef, but use veggies to bind it. Shredded zucchini and/or carrots work great. Also use this idea in all of your ground beef recipes – tacos, casseroles, etc. If veggies are shredded really well, kids won’t even notice!
These pancakes have a gorgeous ruby red color which is super fun, but the kids don’t need to know where the color comes from! They are packed with red beet goodness! Drizzle on your favorite syrup and they’re sure to be a hit!
Smoothies are a great way to blend in whatever fruit and veggies you think your child needs. I throw spinach in with some blueberries, and my son has no idea there is anything green in there!
