It’s picnic and barbecue time, which means coming up with some new, quick side dishes to bring along to pot lucks or tuck into the picnic basket.
I’ve seen this salad in many variations and several different names, but this is the one that was passed on to us at my bridal shower years ago.
It’s great for picnics since there’s no may, so it won’t spoil as quickly and everyone in our family loves it!
Fumi Salad
8T silvered toasted almonds (optional)
8T sesame seeds, toasted
4 green onions, finely chopped
1 medium head cabbage, shredded
1 cup shredded red cabbage
2 packages chicken Ramen noodles, broken
In a large bowl, toss the onions and cabbage. Set aside while preparing the dressing.
Dressing:
4T sugar
1-1 1/2 tsp black pepper
6 T rice vinegar
3/4 c canola oil
1/4 sesame oil
1 chicken flavor packet from Ramen noodles
Combine all ingredients and shake well. Pour mixture over cabbage to desired consistency.
Toss cabbage, noodles, almonds and seeds to combine.
