Healthy Pumpkin Pie Bread

Kid Tested and approved: Gluten Free, Dairy Free, & (essentially) Sugar Free, Pumpkin Pie Bread

1 C Organic Sucanat
3 large eggs
1 large egg white
1/4 C unsweetened applesauce
1/4 C water
1/4 C homemade apple cider (or organic apple cider)
8 oz canned pumpkin puree
1 3.5 oz container of carrot baby food
1 C garbanzo bean flour
2 C Brown Rice flour
2 tsp baking soda
1/2 tsp sea salt
2 tsp cinnamon
1/2 tsp cloves
1/2 tsp nutmeg
1/2 tsp allspice

OPTIONAL- sprinkle with a hand full of mini chocolate chips

Preheat oven to 350, Spray Pam on 2 loaf pans (I used an 8 oz Pyrex dish). Mix ingredients together. Pour batter into pan(s) and bake for between 35-45 min. Check at about 30 min. Cover with foil when out of the oven to cool and enjoy!!

I had to have my kids try it (hence the piece missing in the photo). They are on their third piece, so it is kid approved!
