It’s time to get creative and start thinking about planning back to school lunches!
We found some fun and different recipes we wanted to pass along.
1) Pasta
Why not skip the boring sandwich and pack a pasta dish? Either a plain pasta salad with fun colored or shaped noodles for your more picky eaters or a more creative recipe for your adventurous ones? Add fresh tomatoes, salami or sausage to pasta with cheese for a quick healthy lunch.
2) Turkey, Corn & Sun-Dried Tomato Wraps
Fresh corn kernels, tomatoes and lettuce fill these hearty turkey wraps. This wrap is great for picnics or when you need to have dinner on the run. Add some crumbled feta or shredded Cheddar for another layer of flavor. Serve with carrot sticks, sliced bell pepper or other crunchy vegetables plus your favorite creamy dressing.
3) BBQ Chicken Sandwich
Toss leftover cooked chicken with barbecue sauce and crunchy carrots for a quick and healthy lunch.
1/2 cup shredded cooked chicken
1/4 cup shredded carrots
2 tablespoons barbecue sauce
2 teaspoons light ranch dressing
1 small whole-wheat sandwich bun
1 leaf romaine lettuce
PREPARATION
Combine chicken, carrots and barbecue sauce in a bowl. Spread ranch dressing on the bun. Top with the chicken mixture and lettuce.
Try a fruit-and-nut-studded couscous salad alongside grilled salmon or chicken for supper or on its own for a fresh lunchbox treat.
