My grandma made THE BEST Mac and Cheese! I miss her bringing me over containers of that feel good food from her special recipe!
Here are a few ways to spice up the same old Macaroni and Cheese recipe we love:
Here is the basic way to start off with homemade Mac and Cheese:
In a Dutch oven or large saucepan, melt ½ stick butter over medium heat. Add ¼ cup flour and cook for 3 minutes, stirring. Add 3½ cups milk and cook for 5 minutes, stirring, until thickened. Off the heat, stir in 1 lb grated cheddar and salt and pepper to taste. Stir in 1 lb short pasta, cooked.
But for a twist try these additions:
Add Italian breadcrumbs on the top with pats of butter and bake in the oven until the top is slightly brown and crispy (that’s how my grandma made it!)
OR
Stir in diced cooked ham, peas, and asparagus tips.
OR
Stir in cooked crumbled bacon, caramelized onions, and chopped scallions. Add a swirl of BBQ sauce.
OR
For the kids, try fun different color pastas in all kinds of shapes to mix it up.
