Tex-Mex Casserole

This Tex Mex Casserole is super easy and one of my favorite comfort foods.

1 1/2 pounds lean ground beef

1 package of taco seasoning mix

15-ounce can pinto beans, drained and rinsed

15-ounce can tomato sauce

11-ounce can whole kernel corn, drained

4 ounces shredded cheddar cheese

1 cup coursely-crushed tortilla chips

  • Preheat oven to 400 degrees F.
  • Brown ground beef in a large skillet over medium-high heat. Drain off the excess fat.
  • Stir in the seasoning mix, pinto beans, tomato sauce, and the corn. Bring the mixture to a boil, then reduce the heat to low. Simmer for about 5 minutes, or until the mixture has thickened some.
  • Spoon the mixture into a 2-quart baking dish, then sprinkle with the cheddar cheese and tortilla chips equally across the casserole dish.
  • Bake in the oven for about 10 minutes, uncovered, until the cheddar cheese is fully melted and just begins to bubble.

Serve with the assorted toppings. Top with the jalapenos and/or salsa if you really like your food spicy. This taco casserole makes 12 servings.
