Watermelon is a delicious, refreshing sweet treat, but it doesn’t have to be only sweet! It makes a lovely platform for a delcious salad! Try this with grilled fish or chicken!
Watermelon Salad
Serves 4-6
1 seedless watermelon (4-5 pounds), cubed into bite-sized pieces
1 cup red onion, halves and thinly sliced
1 pint cherry tomatoes, halved
1/4 c red wine vinegar
1/2 c extra virgin olive oil
fresh mint, julienned
1 pkg crumbled Feta cheese (about 3.5-4 oz)
salt and pepper to taste
Add vinegar, salt and pepper, olive oil into a jar and shake well to combine.
Combine onions, watermelon and tomatoes in a large bowl. Drizzle dressing over top and toss gently to combine. Add mint and Feta and toss gently. Serve immediately.
