Super Bowl 7-Layer Dip From GreenPlateRule

Are you starting to plan for your Super Bowl party? Maybe you just need a delicious recipe for a get together. Here are two versions of 7-Layer Dip, one for adults and one for the kiddos. Thanks to one of our featured bloggers, GreenPlateRule, for these yummy recipes.

Football season is in full swing and with it comes lots of get together and of course FOOD! Here is a twist on a family favorite – one version for the adults and another for the kiddos. Set out the ingredients and get the kids involved in assembling this quick yet delicious and flavor packed dip! Serve with veggies or our personal favorite – Food Should Taste Good chips.

A delicious dip that is everyone’s favorite! If you have any leftovers it works great for an after schools snack! My kids love to help me make it and then they dig in as soon as the last layer is added. Feel free customize and add corn, black beans, or diced bell peppers – let your tastebuds go wild! You can even add a spoonful to soft or crunchy tortillas for a quick taco. Enjoy – Chef Amy

Kids version:

1 can refried beans (vegetarian)
salt and pepper to taste
1/4 c. water
8 oz. low fat sour cream
16 oz. fresh salsa, liquid drained (our favorite is Jack’s salsa Thick and Chunky – Mild)
1 ripe avocado
1 c. guacamole
1 c. shredded low fat colby cheese
1/2 c. chopped green onions
1/2 c. sliced black olives
1/4 c. chopped cilantro (optional)

Adult version:

1 can refried beans (vegetarian – salsa or chile and lime flavor) or add 1 t. chili powder, 1/2 t. cumin and 1/4 t. oregano to plain refried beans
Salt and pepper to taste
1/4 c. water
8 oz. low fat sour cream
16 oz. fresh salsa, liquid drained (our favorite is Jack’s salsa Thick and Chunky – Medium)
1 ripe avocado
1 c. guacamole
1 lime, juiced
1 c. shredded low fat pepper jack cheese
1/2 c. chopped green onions
1/2 c. sliced black olives
1/4 c. sliced pickled jalapenos (optional)
1/4 c. chopped cilantro (optional)

Kid Version:

Put the refried beans in a microwave safe bowl and add water, salt and pepper.
Heat for 1-2 min until the beans soften up and you can mix in the water and the mixture is smooth.
On a medium platter or in desired dip container spread out your bean mixture until you have an even layer.
Next cut avocado in half and score with a knife into small pieces. Using a spoon scoop out into a medium bowl. Add guacamole and mix lightly.
Layer avocado mixture on top of beans, then add drained salsa and a sour cream layer.
Sprinkle with shredded cheese, sliced olives, green onions and cilantro. Top with a dollop of sour cream and serve and just watch how fast it disappears!

Adult version: Assemble the same as the kids using the same steps but with the kicked up ingredients.

For the refried beans – if using the plain beans and adding spices, just add water and spices to beans and heat to combine.
Add the juice of 1 lime to the guacamole.

We served the kid version with Food Should Taste Good Multigrain Chips. We spiced it up a bit for the adult version and served it with Food Should Taste Good Multigrain, Blue Corn and Jalepeno Chips. You can also serve with sliced veggies (carrot sticks, celery, bell peppers, cucumbers).
