Chicken and Waffles, it’s good for breakfast, lunch or dinner! The waffle recipe below also doubles as a pancake recipe! This was passed down to me by my mom. Just a warning it may turn you into a snob when it comes to waffles and pancakes. The chicken tender recipe is one that I have altered over the years to find the perfect crunchy crust. Fried chicken is the best when it is extra crunchy. The dipping sauce is a combo of maple syrup and hot sauce which may sound nuts, but is a tasty combo of spicy and sweet. It is good for dipping your chicken and waffles. I like to prepare the tenders first and while they are frying, I mix the batter for the waffles and cook them. This way it is ready to plate at the same time. Now get your southern on!

Chicken Tenders                

Chicken Breast(s)

2-3 Eggs

Flour

Panko Bread Crumbs

Salt & Pepper

Chili Power (optional)

Heat oil in fryer on 350. Cut chicken breast(s) into strips or nuggets. In a bowl beat the eggs. In another bowl mix flour, panko, chili powder to taste, salt & pepper to taste. Dip chicken in egg then flour mixture.  Put in fryer, cook until golden brown. I always cut one open to make sure it is cooked through.

 Waffles/Pancakes

2 Cups Self Rising Flour

2 Eggs

8 Tablespoons of Oil (Vegetable, Canola or a Blend)

2 Cups Buttermilk

2 Teaspoons Baking Soda

Heat waffle iron (or griddle for pancakes). In a bowl add the flour, oil and eggs. Add the baking soda to the buttermilk and stir, then add to the flour mixture. Mix well until all ingredients are blended and most of the lumps are gone. When the waffle iron is ready add the appropriate amount of batter according to the waffle iron instructions. Follow the waffle irons instructions for cook time. For pancakes heat griddle on 350. Drop a ladle full on the griddle and flip when the edges look dull, both sides should be golden brown.

~Fresh blueberries can be added to the batter when serving for breakfast.

~You can freeze left over waffles and pancakes. To reheat thaw in microwave for about a minute and then toast in the toaster.

Dipping Sauce 

Mix maple syrup and your favorite hot sauce to taste. (Tabasco, Texas Pete or my favorite Louisiana hot sauce)
